This edible Lupine (most Lupines are toxic!) is commonly grown in Italy and is prized for its plump, tender white beans. Traditionally, the skin of the beans is not eaten. Cooked or marinated in oil, peeled, and then the inner bean is eaten. Nitrogen-fixing, with flowers that are beautiful and lightly fragrant. Prefers cooler weather so make sure to sow in mid to late spring.
Harvest pods when dry before fall rains.
