Pesto Recipe
(Makes about 1 2/3 cups of pesto, enough for pasta for 2-4 people)
4 cups basil leaves (remove stems) packed with medium pressure into measuring cup
1 cup high-quality olive oil
1/3 cup pine nuts
6 garlic cloves
1 tsp salt
(optional) cheese to taste when ready to mix with hot pasta
1. Grind garlic, salt, and pine nuts in a blender or food processor until roughly chopped.
2. Add basil leaves and blend, slowly adding olive oil to combine.
3. If you prefer a chunkier pesto, blend all ingredients except olive oil first and then pour oil in slowly.
4. Enjoy immediately or store in fridge/freezer.
