Also known as Black Salsify. A very interesting vegetable, Scorzonera is a great addition to your garden for season extension and diversity. Sown in late spring, the roots are mature and ready to harvest by winter and can store in the ground and be lifted at your pleasure whenever you are ready for a meal. The greens hold through the winter for salads or stir fry, and the flowers are edible (although large!) in the following spring. A great addition to the permaculture garden or for those looking to experiment with new food crops. Very hardy perennial in this climate.
